9-39: Zesty Meat Casserole

Not every Simply Delicious recipe is a home run. With 9-39: Zesty Meat Casserole, perhaps unsuccessfully, tries to break the mold. By not forming the beef into a patty, meatball, or kebab, this casserole tries to do something different. To cook this recipe, I had to prepare a parsnip, something I’m not accustomed to. I made this dish before a trip out of town and brought it with me to have something homemade to eat.

I cut my vegetables in a manner similar to the photograph, but my substitution of milk for half-and-half made the sauce come out runny.

9-29: Ground Meat Kebabs

The Ground Meat and Sausage category is mainly 2 types of dishes: ground meat patties and ground meat kebabs. 9-29: Ground Meat Kebabs is one of the kebab variety. I made this recipe at the same time as 9-19: Meatballs on Skewers because they called for almost identical ingredients.

Grilling outside is much more satisfying than using a grill pan in my apartment, but I currently don’t have a lot of space for grilling.

Editor’s note: Putting on my ex-history teacher hat for a second–note that Simply Delicious claims this dish is from the vineyards of Yugoslavia, which hasn’t been a country since the late 80s/early 90s, around the time the Soviet Union collapsed. These remind me a lot of lule kabobs, which were one of my favorites when we lived in a heavily-Armenian area in Los Angeles (the apartment with the blue tiles and yellow walls from the beginning of this project). These are NOWHERE near as good as those ones, but I suppose they could pass in a pinch.

9-1: Spicy Beef Patties

Any excuse to pull out the electric griddle is alright with me! After all of the meatball-style recipes in the Ground Meat and Sausage section, I was ready for a patty-style recipe again and 9-1: Spicy Beef Patties did not disappoint. I’ve never thought to put pickled beets into a burger before, but after trying this recipe, I would consider it again.

I love the little skinned potatoes they served alongside the patties in the example photo. I haven’t quite learned the technique to cook those yet. Their side salad is very photogenic, but not very filling. 3 tomato slices and 1 leaf of lettuce.

9-19: Meatballs on Skewers

Gyro is probably my favorite preparation method of ground meat, so when I saw this recipe, I got very excited. This recipe, 9-19: Meatballs on Skewers is basically the same recipe as gyro, just served differently. However, I wish I had just bought a container of tzatziki at the store instead of making the yogurt sauce.

The rabbit handle piece on the end of the skewer in the example photo is simply incredible. I’ve never seen a set of skewers quite like that. It looks like the other skewers have other animal handles, I think I see a cat and a chicken on the other skewers that are slightly obscured by the meatballs. The serving dish is very neat, I’d like to add one to my collection.

9-37: Ground Meat and Bean Dinner

This dish is a dish that just “isn’t quite”. Isn’t quite good, isn’t quite bad. Like a bootleg chili, 9-37: Ground Meat and Bean Dinner is a Simply Delicious mess of a dish that isn’t quite chili and isn’t quite a casserole. 🌶

Unusual flavors is an understatement. Apples, cloves and cinnamon are a very old school meat and flavor combination. The broadest definition of meat is a solid food so pretty much everything used to be called meat. Merriam Webster Dictionary features an archaic definition of meat: “the edible part of something as distinguished from its covering (as a husk or shell)”. Fruit meat, nut meat, vegetable meat, the fleshy part that provides sustenance is technically a meat under this really old definition.

9-9: Pork Meat Loaf with Horseradish

I don’t often have ground pork on hand, but I happened to pick some up at a supermarket sale a few months ago and had been holding it in the freezer for a Simply Delicious recipe–I knew there were a few that called for it. 9-9: Pork Meat Loaf with Horseradish would have been a silly recipe to sub in ground beef for (my usual move), so this one will get the honor of being used with actual pork. 🐖

You guys, this picture does not look promising. Meatloaf is already difficult to get excited about, and I’m not sure if a creamy horseradish sauce is going to be enough to save it. Despite the copy reeking of desperation at the bottom of the recipe card (does this look “extravagant” to you?), I’m still willing to give it a shot. 🙈

9-27: West Indian Meat Casserole

If you had told me as a kid that I would eat meat and bananas together in a dish, I would have called you, “crazy”! Some cuckoo chef over at Simply Delicious is playing a weird joke on people with 9-27: West Indian Meat Casserole, but this dish is rated mostly edible. Jamie wouldn’t touch it with a ten foot pole. 🍌

I don’t really see how this dish is festive. It also isn’t very attractive, at least, not in the way I prepared it.

9-14: Chili Con Carne

9-14: Chili Con Carne

This recipe card gave me an excuse to cook up a big ol’ batch of 9-14: Chili Con Carne, not that I needed an excuse. I’ve made a few pots of chili in my day, but not one quite like this. My favorite episode of the Simpsons, entitled El Viaje Misterioso de Nuestro Jomer (The Mysterious Voyage of Homer), features a chili cook-off as a vital plot point. The infamous space coyote scene still cracks me up to this day. 😹

With the peppers featured prominently on the front of the recipe card, Simply Delicious has pointed out the one major issue I had with this dish. WHO PUTS BELL PEPPER IN CHILI? 🌶 Jamie and I enjoy a little spice in our chili. I’ve always wanted to try adding a pepper akin to the “Merciless Pepper of Quetzalacatenango … grown deep in the jungle primeval by the inmates of a Guatemalan insane asylum.” 🌶

9-5: Modern-Style Hamburger

Simply Delicious has provided a plethora of burger recipes for me to try, like 9-15: Peppercorn Beef Burgers and this recipe, 9-5: Modern-Style Hamburger. I like to cook these on the electric griddle because I can cook the entire batch off at once and they all cook evenly.

I tend to prefer burgers that are dinner sized. These burgers are more like sliders or a thin lunch style burger. 🍔

9-6: Filled Tacos

I never expected to find a recipe for filled tacos in the Simply Delicious cookbooks. 9-6: Filled Tacos are an easy and filling dinner. The prep is the longest part. 🌮

I bought a box of prepared taco shells at the store. Different from the kind shown in the photos provided by Simply Delicious, but they got the job done. 🇲🇽
