4-36: Golden Potato Medley

There are few things in this world as good as potatoes and vegetables covered in cheesy breadcrumbs. It’s a popular side dish that you’ve seen many variations of. I really enjoyed 4-36: Golden Potato Medley and the plating that Simply Delicious shows below looks so much better than how my dish came out.  I go more for utility than aesthetics when I’m cooking, but it’s also true that you eat with your eyes before your stomach. đź‘€

This dish is the perfect side dish, but it is hearty enough to be eaten as an entree. It doesn’t look like much, but is perfect with hot sauce.

17-16: Whole Wheat Baguette

Here’s a simple whole wheat bread recipe. 17-16: Whole Wheat Baguette has “baguette” in the name, but you could use this same recipe to make buns, rolls, sandwich bread, or any other shape you prefer. This is more of a utilitarian recipe more than anything else–nothing fancy here.

Baguettes are indeed long, thin loaves of French bread (French bread being a type of dough, not a type of shape). I made short, thin individual loaves instead, which the Wikipedia article I linked to calls demi-baguettes, although mine are probably even shorter than that. I thought individually-sized ones might be an interesting experiment instead of one or two long loaves.

17-10: Poppy Seed Bread

One of the last entries from the Baked Goods chapter, 17-10: Poppy Seed Bread is essentially white bread with a sprinkling of poppy seeds on top. Simply Delicious shows it as a loaf, but I chose to make it into rolls/buns–since you’re already topping the bread with seeds, it makes it very reminiscent of sesame seed hamburger buns. 🍔

Even 20+ years later, most mentions of poppy seeds inevitably end up referencing this Seinfeld gag, where Elaine’s love for poppy seed muffins keep causing her to test positive for opium on a work-administered drug test.

This often leads to the question: Can poppy seeds really affect a drug test? And the answer, according to the New York Times, is actually “Yes!” 🤔 You’d have to eat a LOT of them (much more than what the recipe for this bread contains) to have it show up at levels that would cause alarm–but the claim does actually have merit.

4-10: Spinach-Mushroom Ring

4-10: Spinach-Mushroom Ring claims to be perfect for a ladies’ luncheon…this light and fluffy egg and mushroom stew dish is yet another dish that I wouldn’t generally make for myself. I ate one of these rings and threw the rest out, and if you know anything about me, that’s something I rarely do.

This dish is described as luscious and from the most accepted and common definition, it can described as richly luxurious or appealing to the senses. The combined flavors of the mushroom sauce and spinach omelette could be described as rich and creamy, but that still doesn’t mean it was a tasty dish.

4-20: Oven-Baked Tomatoes

I love the appetizer-style dishes featured in Simply Delicious. They are complicated because of making individual portions, but you can prepare them ahead of time to heat and serve when ready. When I make a batch of an appetizer like 4-20: Oven Baked Tomatoes, I like to eat a few right away and then stash the rest in the refrigerator to eat later as a healthy snack.

My family did not grow up eating baked, hollowed-out, stuffed tomatoes, however, that didn’t stop me from thoroughly enjoying this dish.

Editor’s note: Looks like my mom made this one before, and substituted broccoli for mushrooms–that makes sense, she hates mushrooms. She also dislikes tomatoes, so I have no idea why she was making this in the first place.

6-39: Chicken Pot Stickers are another case of a food that I “can” make, but would choose not to after seeing all of the mess and work involved.

“Steamed, stuffed dumplings” sound delicious. Mine came out a little more fried than steamed, still delicious.

20-15: Vary the Butter Sauces

Consider 20-15: Vary the Butter Sauces to be the advanced version of 20-13: BĂ©arnaise and Hollandaise Sauces. There’s probably something that bridges the two better (whatever 20-14 is, but I don’t have that card in my collection), so 5-4: Eggs Benedict will have to do. This set of recipes is part of the Cooking School, the back section of Simply Delicious that provides instructions in basic techniques, ingredients, and recipes that any skilled cook should be familiar with.

20-15 Vary the Butter Sauces

Like I said in 20-13: BĂ©arnaise and Hollandaise Sauces, Hollandaise and its variations comprise one  of the five mother sauces, a big part of French cuisine. Mastering it (and the others) is one of the marks of an accomplished and talented chef. I’ve always appreciated a well-made butter sauce, and these variations are intriguing–I’d be interested in eventually trying each one out.

These are part of the Cooking School segment in the back of the book, teaching you basic techniques, ingredients, and recipes that you’ll need to be an experienced cook. This recipe, 20-13: BĂ©arnaise and Hollandaise Sauces covers the basics of butter sauces, which you can expand upon with 20-15: Vary the Butter Sauces.

15-19: Layered Fruit Salad

It’s a few weeks after Mother’s Day at this point, but better late than never. This year for Mother’s Day, I took a few Simply Delicious recipes and decided to make a brunch menu out of them for my mom. We usually do lox and bagels at home for our holiday brunch celebrations, but this year I wanted the full Mother’s Day buffet experience–but still at home. It’s not brunch without fruit salad, so the first entry for this grand event (MD2017) is 15-19: Layered Fruit Salad.

But wait a minute, you say! This is from the Cold Desserts category? How can it be for brunch?

It’s fancy fruit salad–I think it’ll be okay either as a dessert or a brunch side dish. Plus, I need to burn off some of these dessert recipes–so many of them require fresh fruit and summer is the best time for that.

17-39: Herbed Buttermilk Biscuits

If you’re looking for a relatively easy homemade buttermilk biscuit recipe, 17-39: Herbed Buttermilk Biscuits isn’t a bad choice. I made these once before for a dinner I made about 8 years ago. I remember thinking they were very bland as written–hence my notes written on the front and back about adding more salt. After following my own suggestions this time around, they’re much improved.

I didn’t make these for any particular dinner or reason this time around, but they still made decent snacks and accompaniments to meals throughout the week.
