1-23: Pita Pockets

1-23: Pita Pockets

Today, I have the last unmade Group 01 recipe in my possession to share with you today, 1-23: Pita Pockets. They’re essentially sandwiches with two sorts of filling, both very 1980s/”light”.

One of my favorite restaurants is called Pita Pockets–I’ve been going there since I was in high school (over 20 years…eeek) and it’s one of the places I try to stop at when I find myself back in Southern California. Their pita sandwiches are very different from what we’ve got here today (and theirs are WAY better).

I remember pitas being a big deal in the 1980s-1990s, so it’s not surprising that they were included in this recipe collection. They’re still super popular today, but they’re not as “new” of a concept. Speaking of new, this one came from the NEW book, hence why I wasn’t aware until relatively recently that Simply Delicious even had a pita sandwich recipe.

2-31: Smoked Chicken Salad

2-31: Smoked Chicken Salad

Given the header picture, I suppose it’s not much of a secret that I’ve made some adaptations to 2-31: Smoked Chicken Salad. Namely, that I’ve changed it from a salad to a sandwich. Here’s the thing–it’s a sad salad as written, but can be made into a pretty decent sandwich that doesn’t require anything different than what’s already required/recommended.

See those rolls in the back of the picture (the ones suggested in the blurb above)? Here’s the quick and dirty: cut one open, take the (very few) salad ingredients, stack inside, eat. Not much more to it than that, but if you’d like to see how that went for me in greater detail, please continue reading.

1-6: Surprise Sandwich Loaf

1-6: Surprise Sandwich Loaf

Trying to put some new posts out there for you–here’s 1-6: Surprise Sandwich Loaf, which was made with a loaf baked from the dough I used for 20-12: Basic Rolls. I made this to break up into portions and take to work with me for lunch one week. It was delicious when first made, but with most things lost its appeal as the week went on.

I love toasted sandwiches. One of my high school jobs was at a Quizno’s, at which I came up with personal sandwich masterpieces which would be impossible to recreate had I been nothing but a customer. However, while I appreciate the efficiency of an entire toasted sandwich loaf, this particular execution leaves something to be desired.

17-18: Golfer’s Rolls

17-18: Golfer’s Rolls

If you’re looking for something you could use for making lunches in advance, 17-18: Golfer’s Rolls could be an option. My suggestion? Use a creamier, softer cheese like they do in their picture (Simply Delicious shows Brie) or add some mayonnaise/avocado/hummus at the time of eating because these rolls can get a little dry.

Simply Delicious advocates freezing these rolls after filling them like sandwiches, and then bringing them with you somewhere (like a golf course). While my new co-workers like to play golf a lot, I only ended up bringing these to lunch at my desk. ⛳️

1-18: Club Sandwich

1-18: Club Sandwich

In honor of Presidents Day today, here’s a classic American dish: 1-18: Club Sandwich. Wikipedia claims the club sandwich (or “clubhouse sandwich”) originated in late 19th century New York. It’s not hard to find one these days, and while the Simply Delicious version is not quite restaurant-sized (usually they’re HUGE), it’s still a hearty lunch or dinner option. 🇺🇸

1-18 Club Sandwich

I have no idea what’s going on with their picture or description of this sandwich–their picture only shows one layer (no middle bread) and the order of ingredients they describe above doesn’t match the recipe. I think I’m sticking with the recipe version.

17-35: Healthy Bread With Vegetables

17-35: Healthy Bread With Vegetables

17-35: Healthy Bread with Vegetables was yet another attempt to make bread that went somewhat awry. This recipe was quite an experiment with quite unusual results. 🍞

This bread was definitely moist and colorful. I’ve had carrot cake, but I’ve never had shredded carrot in my bread. I substituted the beet with zucchini because the only Beets I enjoy are the band from Doug.

1-4: Ham and Cheese Sandwich

1-4: Ham and Cheese Sandwich

Hope you’ve been enjoying my husband/co-writer Adam’s posts–he’s having fun writing them. I’m a bit behind on my own posting, so this is one I “cooked” a while ago. 1-4: Ham and Cheese Sandwich is exactly what it sounds like, hence the quotations around “cooked”–it’s basically a grilled cheese with ham in it.

As in 2-24: Parisian-Mushroom Salad, this is a French recipe somewhat simplified–the running theme throughout much of Simply Delicious. The croque monsieur is indeed a well-known French recipe,  and lots of different takes on it exist out there.

1-28: Picnic Tuna Sandwiches

1-28: Picnic Tuna Sandwiches

Leave it to Simply Delicious to try to make tuna sandwiches sound fancy. 1-28: Picnic Tuna Sandwiches is a basic method for constructing a sandwich, using tuna fish, presumably for a picnic. It’s really all in the title.

I suppose you have to learn how to make tuna salad somehow–maybe you grow up with parents who don’t like it and you never learn. That’s not what happened in my case (my mother adores tuna salad), but I suppose it’s the case for some people, and so recipes like this must exist. Reminds me of this xkcd comic.

17-38: Olive Bread

17-38: Olive Bread

Here’s one I’ve made a couple of times before. 17-38: Olive Bread is a nice, easy bread to make, especially if you don’t have a ton of experience with the process. I think sometimes yeast doughs can be intimidating to beginners, but this one hasn’t failed me yet–even when I was still just beginning to make bread. If you’re looking for a more “plain” type easy bread, check out 17-6: Best Ever White Bread. However, if you like those olive batard breads from the bakery section of the market, you’ll love this one.

I’ve made this twice before, once in its intended form (but with more olives because I LOVE olives) and again soon after, but in a smaller bun-size with chipotle peppers & garlic instead of olives. I used them for slider buns for burgers intended for a New Years’ party, judging from the date on the card. What will I change about this recipe this time?
