11-8: Almond Trout

Almonds are grown in California in abundant numbers so luckily, the featured ingredient in 11-8: Almond Trout is fairly inexpensive for us. This is not the first recipe to include almonds in a main course.  Jamie chopped some for the sauce of the 11-16: Indian Fried Fish and I added them whole to 9-27: West Indian Meat Casserole. Jamie also combined pork and almonds in 7-55: Sunday Pork Stew. Who could forget the chopped almonds in the sauce from the mauve chicken in 6-24: Mushroom-Almond Chicken? Once you go into desserts, Simply Delicious offers tons of recipes that contain this wondrous drupe, which is technically a seed, but commonly called a nut.

Pan-fried fish has to be my second favorite preparation of fish, second only to full frying in a deep fryer, of course.

16-11: Meringue-Topped Chocolate Pie

A few months ago, we celebrated Pi Day in my office. Most of the pies were store-bought, but I decided to flip through Simply Delicious and see if there was anything worth contributing. I decided on 16-11: Meringue-Topped Chocolate Pie–everyone likes chocolate, and we had had a mishap with the lemon meringue pie on the way back from the store while preparing the day before.

If you’re not familiar with Pi Day, it takes place on March 14th, which when written as a numeric date is 3-14 (at least in the U.S. it is–some countries reverse the order). Pi (the mathematical constant represented by the Greek letter π) is usually rounded up to 3.14, so March 14th is celebrated with actual pies (and a bit of math) as a play-on-words. 😂

No one really needs an excuse to eat pie, but “It’s a math joke” is certainly an acceptable one.

14-14: Sliced Pineapple with Nut Meringue

14-14: Sliced Pineapple with Nut Meringue is a unique desert. It was actually fairly tasty, just not something I would have thought to put together. This interesting dish has multiple textures, flavors, and temperatures which all interact nicely. I love raspberry, pineapple, and meringue, but I never thought to combine them, especially this way. 🍍

Meringue is probably one of my favorite applications of eggs in cooking. Egg whites only, but still a great use of eggs.

20-12: Basic Rolls

Playing a bit of catch-up here since unscheduled interruptions, other non-food-related projects, and massive amounts of holiday baking have put me far behind in terms of keeping up with posts. I had started working on a Bread Series, starting with 18-1: Basic Yeast Dough I which I published back in October. Covering 20-12: Basic Rolls was intended to play off of that concept, giving you an easy recipe to utilize the lessons presented in both that post and its follow-up, 18-2: Basic Yeast Dough II.

Quick review: the last three chapters of Simply Delicious are part of its Cooking School, intended to review basic techniques, ingredients, and recipes with which all aspiring chefs should be familiar. I’ve covered a few bits and bobs out of those last few chapters, but much of it still remains untapped.

17-14: Nutty Muffins

Here’s one of the last few recipes left from the chapter on baked goods, Group 17: Baked Goods. I made 17-14: Nutty Muffins for work–I thought they’d make a nice accompaniment to everyone’s morning coffee. ☕️

See? Even Simply Delicious shows them being served with coffee. Wikipedia offers a deeper dive on the history of muffins if you’re interested/bored. There’s a difference between these types of muffins (referred to as “quickbread” muffins or “American” muffins due to the fact that they’re very similar to a cupcake or other types of sweet, dense, cake-like bread) and the traditional “English” muffins that you get with Eggs Benedict or an Egg McMuffin.

9-19: Meatballs on Skewers

Gyro is probably my favorite preparation method of ground meat, so when I saw this recipe, I got very excited. This recipe, 9-19: Meatballs on Skewers is basically the same recipe as gyro, just served differently. However, I wish I had just bought a container of tzatziki at the store instead of making the yogurt sauce.

The rabbit handle piece on the end of the skewer in the example photo is simply incredible. I’ve never seen a set of skewers quite like that. It looks like the other skewers have other animal handles, I think I see a cat and a chicken on the other skewers that are slightly obscured by the meatballs. The serving dish is very neat, I’d like to add one to my collection.

3-9: Mexican Chicken Soup

Chicken soup is always good on a day when you are feeling sick. I made 3-9: Mexican Chicken Soup on a really hot day, basically the worst type of day to make chicken soup. I was able to freeze and store all of this soup for future meals. Later on in the week that I made this soup, I caught a nasty cold and having a stockpile of chicken soup really helped me feel better.

The spice mixture is the only part of this soup that is remotely Mexican.

2-8: Chicken Salad

2-8: Chicken Salad

Simply Delicious has the best decor in these photos. The wooden salad plate, white wine, and hand carved chicken plant box add a lot of character to this photo accompanying 2-8: Chicken Salad, it all screams 1980’s “chic”. Their final photo looks a lot more appetizing than my stark modern plating.

Such a luncheon treat! The chutney and mustard give the salad dressing a tangy flavor that compliments the chicken really well.

17-65: Giant Caramel Rolls

A recent Sunday brunch called for a special treat: 17-65: Giant Caramel Rolls. Similar to “sticky buns“, these rolls have been taunting me for a while. I decided to make a batch and drop them off for brunch–that way most of them gets eaten by everyone else.

Don’t get me wrong–there’s still two in my freezer as I type this. But that’s better than ALL of them. Plus, there wasn’t room for all of them–I still had 16-14: Orange-Almond Cake in there, too. The rest of these ended up in my mom’s freezer instead.

16-14: Orange-Almond Cake

16-14: Orange-Almond Cake

No, this isn’t a repeat of 16-47: Orange-Almond Pie–at least, not exactly. 16-14: Orange-Almond Cake uses almond paste while the pie version used almond meal (flour). This one also includes dark chocolate, which ALWAYS goes well with almond and orange flavors. 🍫

In the interest of not eating the whole cake at once (which is possible with something like this), I’m going to bake 12 individual cakes instead with a mini-Bundt pan that I have. That way, I can make them all, wrap and freeze them so that we can pull out a portioned piece for dessert without the temptation of eating the whole thing.
