19-7: Fresh and Dried Herbs

19-7: Fresh and Dried Herbs

19-7: Fresh and Dried Herbs has been a recipe-in-the-making for a few months. I mention frequently that I often write these entries months after I complete the actual recipe, but this one actually took me that long TO complete.

19-7 Fresh and Dried Herbs

Usually, these Cooking School cards don’t have too much in the way of actual recipes–often times it’s more like the card above, more recommendation than actual recipe. I’m not going to restate what they’ve written here–it’s all good advice. Jump behind the cut for some herb blend recipes as well as a DIY vinegar challenge and BONUS limoncello recipe.

13-8: Vegetarian Calzone

13-8: Vegetarian Calzone

Much like Ben Wyatt, a late-addition character from NBC’s Parks and Recreation, I have enjoyed my fair share of calzones. Hawaiian calzones are one of my favorite types, pineapple and Canadian bacon can’t be beat! However, when wanting to eat in a health conscious manner, 13-8: Vegetarian Calzone is a great meat-free alternative.

Preparing this dish was super easy. A lot of time can be saved by using ready-bought puff pastry.

Editor’s note: This was a dish I made as part of a big family dinner I cooked with a family friend when I was 13–my step-grandmother is vegetarian and we made this so she’d have something to eat. My mom made her a baked potato for Thanksgiving once, complete with a toothpick-and-construction paper turkey head, wings, and tail that I painstakingly spent the day crafting. She did not appreciate the turkey-potato (too closely resembled an animal for her…go figure), but she did like this calzone.

9-45: Country-Style Sausage Medley

9-45: Country-Style Sausage Medley

“Country-Style” carries multiple definitions and connotations. The author of 9-45: Country-Style Sausage Medley surmised that a dish containing this many varieties of vegetables must be “country-style”. Chicken sausage is a low calorie option, however, it lacks the punch of flavor a good beef sausage can provide.

This dish contains a lot of vegetables already. If I had to add any other vegetables, I might substitute the cabbage for Brussels sprouts.

9-16: Individual Salami Pizzas

9-16: Individual Salami Pizzas

Simply Delicious has several takes on pizza–we’ve covered quite a few already including 13-11: Vegetarian Pizza, 1-9: Four Seasons Pizza, and 5-31: Oven Pizza Pancake. There’s even 11-4: Calzone with Seafood if you like your pizza folded in half with toppings on the inside. 9-16: Individual Salami Pizzas is probably one of the more “traditional” pizza recipes so far.

It’s recommended to make this for something like a kid’s party, since it’s pretty tough to find a kid who will say no to pizza. I was a teacher for several years, ran a meal program for a school for a year or two, and I’m here to tell you that pizza (in whatever shape/form/capacity) was always a crowd pleaser for young and old.

8-29: Marinated Flank Steaks

8-29: Marinated Flank Steaks

Over the years I’ve made plenty of steaks, but I don’t have a lot of experience cooking flank steaks. Jamie grew up eating carne asada–but on the East Coast, we were eating Steak-Ums sandwiches. Not quite the same, but it got the job done. 8-29: Marinated Flank Steaks was a fun opportunity to cook this recipe and get familiar with cooking a different cut of beef that I’m used to.

I have some experience with marinades so this dish wasn’t too difficult for me to attempt. It is ranked Fairly Easy after all.

17-22: Bread Loaves with Creamy Filling

17-22: Bread Loaves with Creamy Filling

One of the last few from the “in-the-queue-way-too-long” batch, here’s 17-22: Bread Loaves with Creamy Filling. I’ve been putting this recipe off for a while–I never seemed to have or remembered to buy cottage cheese to make it. Yes, in another 1980s-lowfat-health-craze-inspired moment, Simply Delicious chooses to sacrifice flavor for “health benefits”, this time by stuffing whole wheat bread with herb-flavored cottage cheese.

See? “Healthy” is right there in the description. Now, 30+ years later, we’ve determined that fats are probably better for you than we thought back then, and carbs/sugar are probably a lot worse for you. Remember, when they make things “low-fat”, they usually have to jack up the sugar to make it somewhat edible. Not really a great strategy for weight loss, as my parents’ yo-yo dieting throughout the 80s, 90s, and beyond can attest to.

9-13: Hungarian Frittata

9-13: Hungarian Frittata

Frittata is one of my favorite dishes. I could eat eggs all day: morning, noon, and night. I am so happy that the meme of Put an Egg On It has come into existence. A warm egg yolk on top of well done corned beef hash is my favorite application of Put an Egg On It. Sausages and salami inside a bed of scrambled eggs could be a close second for best application of eggs in a dish.

A frittata sounds a lot like an omelette: Eggs, veggies, and meat combined together. The difference is in how the ingredients are combined.

5-8: Royal Crêpes

5-8: Royal Crêpes

More queue-cleaning–add 5-8: Royal Crêpes to the pile of other crêpe recipes that I’ve done over the course of this project. When I first started making crêpes for this project about 4 years ago now, I had never made crêpes before. Now I feel like I’ve got a pretty good handle on the concept, so let’s kick it up a notch with a “royal” version. 👑

Oh no–my mortal enemy: Hollandaise sauce. I’ve struggled with it in the past–will this be my redemption? Jump behind the cut and find out!

8-22: Beef Tenderloin with Whole Garlic

8-22: Beef Tenderloin with Whole Garlic

Oooh-la-la! What a fancy recipe 8-22: Beef Tenderloin with Whole Garlic is!. I have never attempted a dish like this before, but I approached it with confidence because I’ve watched Jamie make both a spiced butter and oven roasted garlic. She makes it look easy, but making this dish was not as difficult as I thought it would be. I don’t have plates with fancy fluted edges and I was out of red wine to serve with my dish, but I served it as best I could.

This dish is definitely gourmet. With spiced butter and roasted garlic, this dish contains a lot more elements than my usual go-to dishes.

6-27: Sweet-and-Sour Chicken

6-27: Sweet-and-Sour Chicken

The quote from the front of the recipe card for 6-27: Sweet-and-Sour Chicken is as true as anything I could write about this recipe:

Cook chicken legs and thighs the Chinese way, in a sweet-and-sour sauce. This is such a simple way of preparing bargain chicken and the result is just terrific.

Sweet-and-sour sauce tastes great when you make it fresh, but it’s just as easy to buy the thick, red sauce in a jar and call it good.
