Who doesn’t love a simple salad? The editors of Simply Delicious knocked one out of the park with 2-23: Grilled Chicken Salad. Combining fresh vegetables with nicely cooked chicken is an easy method for creating a killer salad. My final product didn’t look much like the photo below, but the flavor is totally on point.
I love the bowl of strawberries and fresh baked biscuits behind the salad in the product photo.
We’re over 3 years into this project, and I’m only now covering the very first recipe in the book, 1-1: Orange-Glazed Chicken Wings. I don’t think I’ve ever made these wings before, but the memory of coming up with this project and starting to put it into motion (by sitting down and actually scanning the cards) features this recipe very prominently. Since this was the very first one, that might explain why the edges of the card pictures are strangely cropped.
While this would probably make a decent appetizer, I feel like as a society we’ve come pretty far in wing technology and distribution methods in the last 30 years–these are a lot of work for something that are pretty easy and cheap to just buy in, especially in more interesting flavor/spice combinations. There’s entire restaurants dedicated to wings at this point (even ones that don’t feature an owl and scantily-clad women).
We did make wings in-house during my restaurant tenure, but people are awfully finicky about the preferred style (fried vs baked, breaded vs non-breaded, vinegar-based sauce or not, etc.) of their wings, especially when craft beer and other hipster-y stuff like chalkboards and cornhole are involved.
I like dishes that are easy enough to prepare on a weekday night. 6-14: Chicken Breasts with Tomato Salsa teaches you to make a simple salsa to put on top of some tasty chicken breasts. 🍗
I really enjoy dishes like this for dinner: simple and flavorful ingredients which combine to make a nutritious, Simply Delicious meal.
This is not my first time to the broccoli soup rodeo, so 3-33: Broccoli Wild Rice Soup should be a snap. 🏇🏼 A while back, I made 3-21: Broccoli-Celery Soup and broccoli is still in season at the time I am writing this post.
Cold isn’t my favorite temperature when eating soup, but with so much sour cream, the soup may separate during reheating. ❄
I wasn’t about to go out and buy mini quiche pans just to cook 5-5: Individual Ham Quiches. Taking the alternative route, I made this dish as one, full-sized quiche.
I believe the card puts it best. At this point I’m not quite “fortunate enough to own small oven-proof quiche pans,” so a full-sized pie pan will do. If you use a foil pie pan, there is a lot less cleanup when the quiche is done, just toss the foil pan in the recycling. ♻
Jamie made me a dish when we first started dating that she called “Shrimp Something“. This recipe, 11-3: Indian Scampi is a dish that is pretty similar to “Shrimp Something” so I really enjoyed it. 👍
Shrimp has to be one of my favorite crustaceans to eat. 🍤
13-14: Wok-Fried Veggies with Pasta is yet another dish where the preparation requires too much chopping. One of my specialties happens to be stir-fry. I can make stir-fry with the best of them.
I’ve made wok fried dishes similar to this on my own, but with chicken or beef. Usually, I think vegetarian food is best left to the rabbits. 🐰
Hey there. October’s been a crazy busy month IRL so far, but I’ve got some entries banked that I’ll start posting, so expect some more entries coming soon. This one, 5-33: Omelette Stacks with Rice, was a Saturday morning breakfast a few weeks ago that was born out of an abundance of eggs and leftover cooked rice. 🍚
Simply Delicious suggests serving it as a main course (presumably for lunch or dinner as opposed to breakfast, to which they seem to be drawing a contrast), but you eat it whenever you like. 🌇
Whosoever it was that the editors of Simply Delicious hired to name these dishes deserves some kind of award. And the award for naming-the-most-dishes-a-casserole-that-are-not-actually-a-casserole goes to….SIMPLY DELICIOUS. A casserole is defined as “a kind of stew or side dish that is cooked slowly in an oven.” 7-8: Chinese Pork Casserole is cooked relatively fast on a stove top. Doesn’t exactly sound like a casserole to me.
This recipe card is great because it basically teaches you to make a version of Chop Suey at home.
Simply Delicious has provided a plethora of burger recipes for me to try, like 9-15: Peppercorn Beef Burgers and this recipe, 9-5: Modern-Style Hamburger. I like to cook these on the electric griddle because I can cook the entire batch off at once and they all cook evenly.
I tend to prefer burgers that are dinner sized. These burgers are more like sliders or a thin lunch style burger. 🍔
