Looking for a quick, healthy breakfast option from Simply Delicious? 5-10: Scrambled Eggs with Tomatoes is from the 1980s, but actually holds up really well 30+ years later. Consider this the predecessor to avocado toast.

This version uses cottage cheese in the scrambled eggs (instead of milk, I assume). If you’re looking to cut calories (and fat) even further, skip the milk and butter altogether–according to the late Anthony Bourdain, you don’t need either for good scrambled eggs.

In honor of Presidents Day today, here’s a classic American dish: 1-18: Club Sandwich. Wikipedia claims the club sandwich (or “clubhouse sandwich”) originated in late 19th century New York. It’s not hard to find one these days, and while the Simply Delicious version is not quite restaurant-sized (usually they’re HUGE), it’s still a hearty lunch or dinner option. 🇺🇸

I have no idea what’s going on with their picture or description of this sandwich–their picture only shows one layer (no middle bread) and the order of ingredients they describe above doesn’t match the recipe. I think I’m sticking with the recipe version.

9-37: Ground Meat and Bean Dinner

This dish is a dish that just “isn’t quite”. Isn’t quite good, isn’t quite bad. Like a bootleg chili, 9-37: Ground Meat and Bean Dinner is a Simply Delicious mess of a dish that isn’t quite chili and isn’t quite a casserole. 🌶

Unusual flavors is an understatement. Apples, cloves and cinnamon are a very old school meat and flavor combination. The broadest definition of meat is a solid food so pretty much everything used to be called meat. Merriam Webster Dictionary features an archaic definition of meat: “the edible part of something as distinguished from its covering (as a husk or shell)”. Fruit meat, nut meat, vegetable meat, the fleshy part that provides sustenance is technically a meat under this really old definition.

1-17: Tuna-Stuffed Tomatoes wouldn’t be my first suggestion as an appetizer for a party, but for a light lunch for myself, I thought it would be a good idea to attempt this recipe. Jamie was not interested in tomatoes or tuna at the time, so more for me!

I really liked these tomatoes, I would eat them again if I didn’t have to do the preparation work.

I bought a box of prepared taco shells at the store. Different from the kind shown in the photos provided by Simply Delicious, but they got the job done. 🇲🇽

1-9: Four Seasons Pizza

1-9: Four Seasons Pizza is a weird little pizza. This appetizer uses ingredients from the 4 different seasons (from my interpretation): ham for spring, olives for summer, mushroom for autumn, and shrimp for winter. The marinated artichoke heart in the middle reminded me of the sun. 🌞

As I stated in the 13-11: Vegetarian Pizza post, I do enjoy pizza. I made these 4 small pizzas and was able to freeze 2 of them whole to eat later. 🍕

10-17: Lamb Chops with Mozzarella

I definitely did NOT eat a lot of lamb or veal growing up, but cooking through these recipes has given me the opportunity to try out some different dishes these days. On a recent Costco trip we found lamb chops on sale, so I decided to use them for 10-17: Lamb Chops with Mozzarella.

This seems like a strange trend that Simply Delicious is perpetuating–7-2: Pork Chops with Tomatoes is essentially the same idea except with pork, Cheddar cheese, tomatoes, and green beans. Take meat, stack a slice of cheese and random fridge/pantry items on it, call it a recipe. ¯\_(ツ)_/¯

9-24: Tangy Double Meat Patties

We’ve covered the fact that burger patties are a common recipe for using ground meat–9-25: Juicy Grilled Meat Patties, 9-44: Wok-Fried Beef Patties, and 9-31: Savory Turkey Patties are just a few of the methods outlined by Simply Delicious9-24: Tangy Double Meat Patties are another variation, this time with a flavorful filling of your choice.

Snappy is such a great adjective for describing food. I don’t think anything past about 1988 has been described as such, but if you dig into the 1950s-60s era of  cookbooks (of which I have a ton), it’s all over the place.

2-36: California Egg Salad

2-36: California Egg Salad

I’m not quite sure what makes 2-36: California Egg Salad “Californian”. I think in the 1980s if you served something on lettuce leaves instead of on bread and used light mayonnaise instead of regular, it was now “healthy” and therefore “Californian“. 🌴☀️🏄🏻‍♀️

I like how their idea of “livening up” egg salad is adding Tabasco and mustard. Really living on the edge there, Simply Delicious.

Side note: The bottle in the back of the shot looks the tarragon vinegar they have you make in 19-7: Fresh and Dried Herbs.
