Greetings, and happy Friday! It’s been a minute, but I’ll always come back eventually–I’ve put way too much time/work/energy into this project to give up now. Today, I present to you 1-12: Mixed Seafood Au Gratin. Au gratin is not new for Simple Delicious, and neither is the use of the pictured serving shells. I finally broke down and bought some a year or two ago for 11-10: French Scallops–I’m happy they’ll get another use here.

When was the last time you heard the phrase “tantalize the taste buds”? I feel like that went out of style around the same time as soufflé humor.

6-6: Ginger Chicken

6-6: Ginger Chicken

It’s not unusual to find a “ginger chicken” recipe on a Chinese takeout menu, but in case you’re looking to cut down on those high restaurant and delivery costs, here’s Simply Delicious‘ take on it: 6-6: Ginger Chicken. I don’t really buy meat anymore these days (unless you count the occasional boiled chicken/plain white rice I make when the dog gets an upset tummy), but from what I can tell, even those prices are pretty much through the roof. Maybe consider Ginger Tofu instead?

I don’t even have peanut allergies and yet I look at that picture and start to get itchy. I love it though–who at Simply Delicious decided that they REALLY needed to drive home the fact that this recipe HAS LOTS OF PEANUTS? And yet, the actual recipe only calls for about half a cup.

What are we supposed to do with the rest of them? Guess it’s a good thing baseball solved that whole lockout thing.

11-10: French Scallops

Happy New Year, and welcome to 2022! I’m going to start this year off with a redo–although you didn’t know that it was such. I cooked 11-10: French Scallops early last year (2021), but did such a terrible job of it that I didn’t even want to share the pictures of it with you. I’ve had it hanging out in my queue for almost a year, and it’s time to fix that–when you know better, you should do better.

I took far too many liberties with my first attempt, not realizing that this dish was somewhat specific in its design and not just “up for interpretation”. Coquilles St. Jacques (note Simply Delicious misspelled it) is a French preparation of scallops, hence their abridged title of “French Scallops”. There’s lots of versions of it out there, most somewhat similar to this one.

15-34: White Chocolate Strawberry Soufflé

Happy New Years’ Eve! 2021 has not been my favorite year (probably not yours either), and so I’m not sad to see it go–in fact, we’re going to celebrate its departure with a holiday-ish dessert today: 15-34: White Chocolate Strawberry Soufflé. This soufflé is not baked, but does include meringue being folded in. I’m not sure if that makes it “not a soufflé,” but at this point, does it matter?

“Dramatic” is definitely a good way to describe this past year, so perhaps this is the perfect dessert/recipe for today. However your 2021 has been, I hope that 2022 is a safe and prosperous year for you and yours.🎇

6-12: Chicken à la King

Here’s another “traditional” recipe from Simply Delicious: 6-12: Chicken à la King. I’ve heard of this one before (you probably have too), but never ate it much as a kid despite it being chicken-based (the mushrooms were probably the dealbreaker for my mom). This is from the “new book“, so I didn’t even know Simply Delicious HAD a Chicken à la King recipe until recently.

Chicken à la King has been around for a while, but enjoyed a resurgence in mid-to-late 20th century America (probably due to all the Baby Boomers and a need to feed them cheaply/quickly). It seems “dated” to me at this point (and not necessarily in a good way), but probably was still pretty popular in some parts of the country at the time these books were published.

Combine this with 8-12: Beef Stroganoff, and you’ve got a pretty good handle on mediocre American cuisine from the 1980s.

11-17: Sole Fillets in White Wine Sauce

Simply Delicious likes to try to mix it up with the types of fish recipes they offer, but a lot of them can actually use the same types of fish interchangeably. I made 11-25: Best Ever Sole Au Gratin with the recommended sole, but I also made 11-13: Flounder with Sauteed Vegetables with sole as well. 11-17: Sole Fillets with White Wine Sauce is a new one to add to the list (it’s even from the NEW book), and looks just as fantastically 1980s as the rest of them.

Simply Delicious claims this “elegant and luscious fish dish” could be the makings of a global phenomenon–big, if true. Wouldn’t be the first time something ocean-related took the world by storm.

11-20: Pastry Fish with Shrimp

If you happen to have a “pastry fish” laying around, here’s a good use for it (I know you’ve been waiting for someone to tell you what to do with it). 11-20: Pastry Fish with Shrimp is so 1980s that I think we can bring it back around again for a 2020s-era reboot–this just screams “novelty food that looks better than it tastes”.

Maybe I’ve just been watching too much Great British Baking Show (or Great British Bake Off, as it is known in its native UK) on Netflix lately, but this sounds like a wacky cooking challenge just waiting to happen.

11-13: Flounder with Sautéed Vegetables

I’m still on my quest to finish off the Fish/Seafood chapter, so expect some more fish entries in the near (maybe-not-so-near) future. 11-13: Flounder with Sautéed Vegetables sounds pretty…plain, but maybe that’s not a bad thing when it comes to whipping up an easy-ish dinner these days.

This card looks like it got slightly impacted during the “Great Roach Massacre of ’09“, but the important part (the recipe) is still plenty legible. All you’re missing here is Simply Delicious acting as 1980s hype man for including fish as part of your diet.

13-9: Enchiladas

13-9: Enchiladas

Enchiladas were always a big hit in one of my previous cooking jobs, and they’re still a big hit when I make them at home for dinner today. Presenting 13-9: Enchiladas as a vegetarian dish (using vegetables as filling instead of meat) is pretty avant-garde for a 1980s cookbook, but you can always adjust the fillings as you wish.

If you want to add some options to your combination plate, you can add in 8-65: Sizzling Skirt Steaks, 3-15: Quick Mexican Soup, or 9-6: Filled Tacos.

Enchiladas were usually (and still are) one of my top choices when going to a Mexican restaurant, and the method here is not that far off from the traditional way to make them.

However, as much of a stickler as I am for authentic/homemade, I like the canned enchilada sauce you buy in the supermarket SO much better and will pretty much always just use that. Can’t tell you why, just my personal preference.

16-29: Heavenly Apple Cake

It’s a bit past apple season (usually fall/autumn), but 16-29: Heavenly Apple Cake uses applesauce instead of fresh fruit, so you can make it anytime you’ve got a hankering for apples. Or cake. Cake is always good.

They (Simply Delicious) are trying REALLY hard to make you believe there are actual apple pieces in this cake. I mean, the picture and the description would lead you to think that this thing is just chock full of fresh apples.

I hate to break it to you, but this is gonna be one heck of a bamboozle.
