It took over 3 years and almost 300 entries, but I’ve finally cracked the final untouched category of Simply Delicious–the very last one, Group 20: Basic Recipes. These are part of the Cooking School segment in the back of the book, teaching you basic techniques, ingredients, and recipes that you’ll need to be an experienced cook. This recipe, 20-13: Béarnaise and Hollandaise Sauces covers the basics of butter sauces, which you can expand upon with 20-15: Vary the Butter Sauces.

Hollandaise is one of the five mother sauces, a big part of French cuisine. Mastering it (and the others) is one of the marks of an accomplished and talented chef. I’ve been cooking for a long time and I’m still working on mastering this one.

16-24: French Chocolate Cake

I recently attended a baby shower for a former co-worker and took it as an opportunity to knock out two more Simply Delicious desserts: 16-39: Apricot Tart and this one, 16-24: French Chocolate Cake. I wanted to bring something fruit/nut and something just plain chocolate, since some people there had nut allergies and others might just want something simple and chocolate.

This was a combination birthday party/baby shower (same person being honored for both), which will hopefully explain the odd decorations on my version of the cake. I’ve spared you pictures of the worst of my decoration choices, but let’s just say I made liberal use of all 4 colors of a grocery store icing kit. I kept meaning to hit a craft store for better cake decorations (or even Amazon), but time got away from me. ⏳

16-14: Orange-Almond Cake

No, this isn’t a repeat of 16-47: Orange-Almond Pie–at least, not exactly. 16-14: Orange-Almond Cake uses almond paste while the pie version used almond meal (flour). This one also includes dark chocolate, which ALWAYS goes well with almond and orange flavors. 🍫

In the interest of not eating the whole cake at once (which is possible with something like this), I’m going to bake 12 individual cakes instead with a mini-Bundt pan that I have. That way, I can make them all, wrap and freeze them so that we can pull out a portioned piece for dessert without the temptation of eating the whole thing.

Pot & pan types are controversial for some cooks, and what one person stands by may be another’s no-go. 👩‍🍳

In this entry, I really only plan to show you what I’ve got going in my own kitchen as of the time I wrote it, and I’ll probably pepper in some links to different pieces on cookware. I can’t claim any real authority on any of this stuff besides my own personal experience and knowledge, but I can at least maybe add one more opinion out there. 🍳

Since it’s currently summer, I’ve been experimenting more with the Cold Desserts section of Simply Delicious. Come fall & winter, we’ll get back to more of the Hot Desserts15-2: Chocolate Mousse is not the first mousse I’ve attempted (check out 15-1: Lemon Mousse for a citrusy variation), but it is a pretty solid chocolate mousse recipe–these are great for entertaining, or even making in individual servings and freezing for later. 🍨

As noted above on the card, chocolate mousse is a classic and popular dessert. There are a variety of ways to approach it, as explained in this Serious Eats feature on the dish, but Simply Delicious’ version is super easy–5 ingredients are all you need. 🍫

17-24: Crispy Oatmeal Cookies

I made 17-24: Crispy Oatmeal Cookies for a family get together and they went over very well. I didn’t serve mine in such an elaborate manner as shown on the card below, but they got a good reception because I dipped them in dark chocolate that I melted on a double boiler. 🍫

We didn’t have an ice cream on hand, but these cookies make a great dessert all on their own. 🍪

17-9: Brownies

Here’s another dessert for you. Book 3, Group 3 (Desserts), Subgroup 17 (Baked Goods) gives us card #9: Brownies. I’ve made these a bazillion times, and they are a GREAT base for adding your own ingredients.

These are good, easy, and fast–the trifecta you’re never supposed to be able to achieve. I highly recommend them, and I keep this recipe on hand for whenever I want to make brownies. One big difference: these use actual chocolate, not cocoa powder. 🍫
