17-11: Scones

Scones have a lot of different methods of preparation, usually depending on varying geographical interpretations. There’s even different pronunciations of the word “scone”–some rhyme it with “tone”, while others rhyme it with “gone.”

Simply Delicious‘ take, 17-11: Scones, seems to most closely adhere to the British version of scones in that they make theirs into round cakes, score them, and then break them apart into triangle shapes after baking. The North American versions tend to be individually-sized, round, and more often than not closely resemble what we refer to as biscuits.

One of my first memorable experiences with scones were at an 18th birthday tea party I attended in the last few months of senior year of high school–we had just come back from a Spring Break trip to England & Ireland, and I came to the tea party prepared with white gloves and pinkies up. They had scones with clotted cream & jam, finger sandwiches, and lots of flowery, delicate pots of tea. ☕️

Wouldn’t have been my choice for an 18th birthday party (I spent a good portion of mine in my freshman dorm room hungover from the Halloween extravaganza the night before), but it was definitely unique.

16-39: Apricot Tart

I had mentioned in 16-24: French Chocolate Cake that it was one of two desserts that I made for a recent baby shower I attended: 16-39: Apricot Tart was the second dessert. I’ve been meaning to make this thing since near the start of this project, and it only took me a few years to finally get around to it. There’s something about this recipe and procrastination, though–this entry’s been sitting in my writing queue half-finished for over a month.

For the length of time that it took me to make it (and to write about it), I never even got to try it–I ended up leaving this and 16-24: French Chocolate Cake still wrapped up on the table at the party. We’ll just assume that both of them were delicious and everyone ate every last crumb of them.

16-14: Orange-Almond Cake

16-14: Orange-Almond Cake

No, this isn’t a repeat of 16-47: Orange-Almond Pie–at least, not exactly. 16-14: Orange-Almond Cake uses almond paste while the pie version used almond meal (flour). This one also includes dark chocolate, which ALWAYS goes well with almond and orange flavors. 🍫

In the interest of not eating the whole cake at once (which is possible with something like this), I’m going to bake 12 individual cakes instead with a mini-Bundt pan that I have. That way, I can make them all, wrap and freeze them so that we can pull out a portioned piece for dessert without the temptation of eating the whole thing.

16-54: Lemony Cottage Cheese Pie

Whenever I think of lemons, I can’t help but think of Lemongrab from Adventure Time, my favorite, lemon-insipred, animated character. From my research, there are two other major characters who are lemon-themed, Lemon Meringue from “doll commercial hidden in a cartoon” Strawberry Short Cake and Honey Lemon, one of the main characters from Big Hero 6, a 3D animated feature film released by Disney in 2014 . I haven’t had a chance to check this movie out yet, but if it ever pops up on Netflix, I’d watch it. Now that my rant about cartoon characters is complete, enjoy this entry about 16-54: Lemony Cottage Cheese Pie, a really weird lemony pie. 🍋

Serving this pie on top of a tapestry featuring a creepy little girl must somehow enhance the flavor of this otherwise weird lemony pie. The background tapestry is probably the most interesting and tasteful part of the entire photograph.

17-25: Almond Rolls

17-25: Almond Rolls are kind of a bonus holiday baking (XMAS 16) post for me–only one person received the bulk of these, as they made up part of a week-long Secret Santa gift-giving event that my work puts on. 🎄🎁 My giftee for Secret Santa not only got these, but a batch of 17-9: Brownies with toasted hazelnuts both in the batter and on top, as well as a batch of my family’s chocolate chip cookie recipe with red & green M&Ms swapped in for semisweet bits. 🍪🎅

These almond rolls are similar to cinnamon rolls/buns, and like the recipe that Simply Delicious provides for cinnamon rolls, these ones lack a glaze/icing as well. However, given the sweetness of the filling and the fact that these are a gift for someone, I’ll forgo adding icing on my own this time. 🍰

17-49: Apple Muffins

My contribution to this year’s holiday baking (XMAS 16) consists of two recipes which include my favorite fruit: Apples! 🍎 🍎 🍎

I ended up multiplying this recipe by 3, which gave us more than enough apple muffins for the holiday gifts. 🎄

The notes on the front of the card are from Jamie’s mom. I made this recipe once before when I had a lot of apples laying around.

17-20: Macadamia Chip Cookies

17-20: Macadamia Chip Cookies

I went pretty cookie-heavy last year when I baked for the holidays, so this year (XMAS 16) I only included one cookie recipe: 17-20: Macadamia Chip Cookies. These ones got pretty rave reviews as well (17-42: Luscious Lemon Bars received the most accolades this year), and I definitely found myself sneaking a few before I packed up and shipped off everyone’s treat packages. 🎁

Simply Delicious is right about one thing: these cookies do make a great gift, and they ship well. Macadamia nuts are a smooth, mild nut that most people won’t be offended by, and the combination of white and semisweet chocolate are the best of both worlds.

17-42: Luscious Lemon Bars

17-42: Luscious Lemon Bars were the second of my holiday baking batches this year (XMAS 16), and one that I’ve baked in the past, given my rather bold notes. I think I was on a cheesecake kick, and thought these would be easier than making an actual cake. “BAD DO NOT MAKE” doesn’t exactly bode well for a recipe–why make it again?

Here’s why: sometimes it’s important to try again, even when the first experience wasn’t exactly a positive one. The first time I made these lemon bars was my junior year of college, so about 10-12 years ago. I had just moved into my first off-campus apartment with my friend, and we had a full kitchen, something I hadn’t had access to for a few years while living away from home in the dorms.

I remember making these in that kitchen (yes, I dragged these books with me all the way out to Colorado and back) and struggling with this recipe. Out of that frustration (and failure) came the note. I’ve learned a lot since then (culinarily and otherwise), so I think it’s time to figure out if it was the recipe or it was me.

15-18: Chocolate Favorites

Cold desserts are not my area of expertise, but I gave it a shot for this recipe. ❄ 15-18: Chocolate Favorites were a hit! I really just got a kick out of saying “Chocolate Favorite” when describing these little treats. 🍫

Bite sized pastries are the best! These two layers did come out as intended, a one-two punch of chocolate flavors. This recipe did indeed make me want to rejoice. 😆

15-49: Chocolate Pudding Deluxe

15-49: Chocolate Pudding Deluxe

The other of two desserts that I made for this year’s Thanksgiving (TGV 2016) was 15-49: Chocolate Pudding Deluxe (the first was 16-52: Apple Nut Saucepan Torte). With my family, it’s REQUIRED that there be a chocolate dessert option when having a big dinner, so I decided to give this one a whirl–I thought it’d be a nice contrast of flavors and textures when compared to the other options (the aforementioned torte and a pumpkin pie my mom made). 🍫

This was the third dish I made, continuing the Wednesday 11/23 portion of my holiday cooking marathon. Since the pudding needed to chill, I thought letting it rest in the fridge overnight would give it the best chance of holding together when served the next day. 🍮

Other dishes I made on this night (Wed. 11/23): the dressing for 1-10: Seafood Louisiana Cocktail, cranberry sauce, 16-52: Apple Nut Saucepan Torte, and a roasted garlic & herb butter to serve with 17-5: Hot Seedy Rolls.
