I had extra strawberries left over from 14-22: Strawberry-Peach Cobbler, so I tried to reuse them into 15-45: Strawberries with Cottage Cheese. Simply Delicious is big on using cottage cheese in an effort to be “low-fat” (all the rage in the 1980s when this book was published) and healthy, but they’re not usually very successful.
Don’t be deceived by their pretty picture here. It’s not ice cream. It’s cottage cheese. Just keep that in mind going in.
Do you think this was supposed to be maybe some sort of richer cheese (think ricotta or mascarpone) and they’re subbing cottage cheese instead to be “healthy”? I just can’t figure this out.
Ingredients. Grand Marnier is orange-flavored and it is liqueur, so it works. I’ve never even used that bottle for anything but cooking, and I don’t even think it was originally mine.
I think those nuts might not be pistachios either–walnuts maybe?

Final plate. It was weird, and I wouldn’t suggest it. Leave this one in the past. Yet another swing and a miss for cottage cheese as interpreted by Simply Delicious.
