I really enjoy dishes like this for dinner: simple and flavorful ingredients which combine to make a nutritious, Simply Delicious meal.


This recipe requires a lot of chopping, but luckily, it is the kind of chopping that is perfect to perform with a food processor.


The main ingredients for salsa: tomatoes, basil, olive oil, onion, and garlic.


Create a tasty flavor coating by combining lime juice and olive oil.  Limes can turn yellow if you leave them on the tree too long.


Mix in fresh thyme and basil.


Brush the chicken with the sauce and grill for 6 minutes on each side. While the chicken is grilling, prep the ingredients for the salsa.


Cut the stems off the tomatoes and chop down the basil and green onion. This helps everything dice evenly. Add olive oil and pulse to create a quick and easy salsa.


In the 5 minutes it took to prepare the salsa, the chicken is ready to flip. Brush with the oil coating and flip the chicken.


Nice grill marks on the chicken! Pour any leftover sauce over the chicken and cook another few minutes until the chicken is done.


Serve the chicken and salsa over pasta with butter. The butter shown in this image is tomato butter that Jamie made earlier in the week. Tomato butter is a good addition to the flavor of the salsa and moist chicken breast flavor mixes well with the acid in the lime juice coating.
