Ahoy there! I’m a sucker for anything fried (especially seafood) so for this lovely fall Friday in late October, I’m sharing with you 11-2: Fried Shrimp and Scallops. I’m usually a fan of eating out when it comes to frying (and fish) due to the…lingering odors left behind, but sometimes you gotta get in there and be your own captain of the seafood sampler.

Simply Delicious says to make this for appetizers, but I think it can be a whole meal. You also even get your choice of sauces!

Happy New Years’ Eve! 2021 has not been my favorite year (probably not yours either), and so I’m not sad to see it go–in fact, we’re going to celebrate its departure with a holiday-ish dessert today: 15-34: White Chocolate Strawberry Soufflé. This soufflé is not baked, but does include meringue being folded in. I’m not sure if that makes it “not a soufflé,” but at this point, does it matter?

“Dramatic” is definitely a good way to describe this past year, so perhaps this is the perfect dessert/recipe for today. However your 2021 has been, I hope that 2022 is a safe and prosperous year for you and yours.?

I can’t quite figure out if 8-23: Beef Kebabs with Red Wine Butter are supposed to be used for when you are serving fancy food in a casual situation (like a truffle and foie gras burger in Las Vegas) or casual food in a fancy situation (like food trucks at a wedding). I suppose this one could go either way, depending on the circumstances.

This recipe features not only kebabs, but a compound butter to serve with them. Simply Delicious is big on beef + compound butter–another example is 8-4: T-Bone Steak.

If you’re looking for some other types of kebabs/skewers for your hypothetical casual yet fancy grilling party, try 10-14: Lamb on Skewers or 9-23: Fruity Sausage Kebabs.

16-16: Chocolate-Frosted Nut Cake

Think of 16-16: Chocolate-Frosted Nut Cake like a Nutella cake–same flavor profile (chocolate and hazelnuts), and maybe even somewhat healthier?

This is a pretty simple cake–it’s just one layer, and all you have to do is frost and garnish it. Or you can do it like me and make little individual cakes instead.

Let’s get the first question out of the way right now. Compôte means “mixture” in French, so 15-20: Apple Compôte is essentially fancy applesauce. Don’t even worry about exerting the effort to mash the apples–these are just syrupy slices.

Some of you might have thought of pie filling when you saw “compôte”–I know I did. There’s actually differences between jam, jelly, preserves, conserves, and compote–I still don’t know if this iteration matches up with their definition, but here’s a recipe from my same trusted source (Serious Eats/Stella Parks) for essentially the same thing we’re making here.

15-26: Strawberry Pastries

Still working my way through the backlog–we’re up to Easter with 15-26: Strawberry Pastries. Strawberries start to creep up everywhere in the springtime, and this dessert dish is a pretty classic use of them. ?

This recipe suggests using vanilla custard, but I’ve seen other similar recipes use fillings like Bavarian cream or crème fraîche. This is essentially a fancier version of strawberry shortcake (which often uses whipped cream), so I suppose it’s all dependent on how heavy or light you’d like to go with it. ?

Happy Thanksgiving! Here’s the final dish from Mother’s Day this year–only 6 months after the fact. Better later than never, I suppose.

16-24: French Chocolate Cake

I recently attended a baby shower for a former co-worker and took it as an opportunity to knock out two more Simply Delicious desserts: 16-39: Apricot Tart and this one, 16-24: French Chocolate Cake. I wanted to bring something fruit/nut and something just plain chocolate, since some people there had nut allergies and others might just want something simple and chocolate.

This was a combination birthday party/baby shower (same person being honored for both), which will hopefully explain the odd decorations on my version of the cake. I’ve spared you pictures of the worst of my decoration choices, but let’s just say I made liberal use of all 4 colors of a grocery store icing kit. I kept meaning to hit a craft store for better cake decorations (or even Amazon), but time got away from me. ⏳

17-24: Crispy Oatmeal Cookies

I made 17-24: Crispy Oatmeal Cookies for a family get together and they went over very well. I didn’t serve mine in such an elaborate manner as shown on the card below, but they got a good reception because I dipped them in dark chocolate that I melted on a double boiler. ?

We didn’t have an ice cream on hand, but these cookies make a great dessert all on their own. ?

1-22: Onion-Potato Diamonds

Finally, an appetizer from the first section of the book. Another story for you: in my first apartment after I graduated college and moved back home to LA, I threw an 80s Valentine’s Day party, and 1-22: Onion-Potato Diamonds were one of the appetizers I made for it–another was 5-20: Golden Cheese Tartlettes.

Look at them. Something about them just screams 1980s cocktail party to me. This time around, I made them to take to a get-together I was attending, along with 17-36: Grandma’s Spice Cake. Both ended up being big hits.
