17-14: Nutty Muffins

Here’s one of the last few recipes left from the chapter on baked goods, Group 17: Baked Goods. I made 17-14: Nutty Muffins for work–I thought they’d make a nice accompaniment to everyone’s morning coffee. ☕️

See? Even Simply Delicious shows them being served with coffee. Wikipedia offers a deeper dive on the history of muffins if you’re interested/bored. There’s a difference between these types of muffins (referred to as “quickbread” muffins or “American” muffins due to the fact that they’re very similar to a cupcake or other types of sweet, dense, cake-like bread) and the traditional “English” muffins that you get with Eggs Benedict or an Egg McMuffin.

17-49: Apple Muffins

My contribution to this year’s holiday baking (XMAS 16) consists of two recipes which include my favorite fruit: Apples! ? ? ?

I ended up multiplying this recipe by 3, which gave us more than enough apple muffins for the holiday gifts. ?

The notes on the front of the card are from Jamie’s mom. I made this recipe once before when I had a lot of apples laying around.

17-33: Coconut Coffee Rolls

Here’s some easy breakfast or snack rolls to make that can get super addictive. 17-33: Coconut Coffee Rolls don’t necessarily need to be consumed with coffee if that’s not your bag, but they do pair nicely for a morning pick-me-up. ?☕️

I’ve made coconut rolls before, but they were somewhat different (17-67: Coconut Crescents) and I used those as part of my 2015 holiday gifts. Most of these rolls didn’t even make it out of the house–usually I try to distribute the majority of the baked good products of this project to my friends and family to avoid eating all of it ourselves.

17-43: Orange Date Quick Bread

I’ve made quick bread from Simply Delicious before (17-51: Three Palms Quick Bread) and it turned out well–this recipe is no exception. 17-43: Orange Date Quick Bread is part of my big batch of assorted baked goods that I made as gifts for people this year–you can find the others linked at the end of this entry.

I chose to include this recipe in my holiday gifts this year because I wanted to include some different textures, flavors, and shapes, as well as reflecting the abundance of citrus fruit during winter in California. ?

17-53: Spiced Whole Wheat Muffins

Another recipe that I intended to cover earlier (when it was more relevant). Whatever, you can totally still eat 17-53: Spiced Whole Wheat Muffins in mid-to-late November.

The recipe card says “not-too-sweet”…they’re not kidding. These are good, but only if you have some preserves or butter to go along with it. On their own, they’re a bit…dry.

17-46: Pumpkin Streusel Muffins

?  I started this one over a month ago, when it would have still been relevant/timely, but procrastination got the best of me. Late, but hopefully not too late, here’s 17-46: Pumpkin Streusel Muffins.

If you’re not totally over pumpkin yet, these are a nice option for breakfast or dessert.

I made these along with 17-53: Spiced Whole Wheat Muffins and 17-68: Oatmeal Raisin Cookies as part of a “fall” baked goods basket for the break room. These muffins were the first of the assortment to disappear. ?
