7-33: Country Dinner

We’re getting to the some of the last recipes I have for some of these chapters, and 7-33: Country Dinner is one of the few remaining entries from the Pork chapter of Simply Delicious. Honestly, this recipe as it exists is not much more than mashed potatoes with bacon and onions. That doesn’t sound bad per se, but I don’t know if it constitutes “dinner”.

Google only gave me a few results for similar recipes, but I’m pretty sure this isn’t too far off from the mashed potato bowls you can get at like KFC. If anything, the KFC ones come with more stuff in them.

9-18: Stuffed Onions

9-18: Stuffed Onions

Never before did I think, “Boy, I should stuff some onions and eat them.” 9-18: Stuffed Onions were not the easiest dish to prepare and I don’t think I would ever choose to prepare it again.

This dish did taste exactly like meat loaf. It is a lot easier to make a meat loaf than to stuff onions, so next time, I’ll get the loaf pan out and chop the onions up.

11-25: Best Ever Sole Au Gratin

This recipe is already setting high expectations with the title 11-25: Best Ever Sole Au Gratin, and I’m not here to completely dash those hopes. This is a pretty decent fish recipe, as those go (I’m usually wary of home-cooked fish recipes), but it’s nothing spectacular, despite Simply Delicious’ assertions. ?

This one gets fancy with the piping bag and tips for the potatoes. I still haven’t replaced my piping/pastry bag set-up since it all failed during the making of 17-52: Apricot Macaroons for the holidays last year (2015). Since I’ve yet to replace it, I’ll have to get creative again.

9-12: Shepherd’s Pie

Here’s one with my mom’s writing on it. 9-12: Shepherd’s Pie promises to be a new take on an old classic and I had a LOT of potatoes to get rid of. Don’t buy a 20-lb bag of potatoes from Costco because it’s “such a good deal”.

I can’t say I’m particularly a fan of shepherd’s pie, but I had all the ingredients and a lot of potatoes to burn up. It stores/freezes well, and this version uses red peppers and beef instead of carrots/peas/corn and lamb (that’s why it’s shepherd’s pie–because of the sheep/lamb). ?

9-28: Stuffed Meat Loaf

I grew up with turkey meatloaf. You probably grew up with some version of a loaf of meat. 9-28: Stuffed Meatloaf doesn’t stray too far from the traditional mold.

I don’t know about you, but I wouldn’t be too thrilled if the planned dinner for a party was a meatloaf. Don’t get me wrong, I’d appreciate the gesture. However, it’s tough to get excited about…meatloaf.

This one…was challenging. And it seemed so simple! 4-30: Cheese-Stuffed Potato Croquettes are essentially mozzarella sticks with a mashed potato/panko coating. These turned from a quick snack into a multi-day attempt.

4-23: Mashed Potatoes with Broccoli

The fourth of the 4 dishes I made before I left for my trip a few weeks ago is from Book 1, Group 1 (Appetizers & Starters), Subgroup 4 (Potatoes & Vegetables), Card #23: Mashed Potatoes with Broccoli. I made this dish to accompany 6-4: Easy Stuffed Chicken Breasts and to use up some CSA veggies.
