7-13: Thai Pork Loin

Pork and pineapple are two of my favorite ingredients. “Sweet and Sour Pork” from almost any Chinese restaurant makes me happy. Simply Delicious finally put these two powerhouse ingredients together in this recipe for 7-13: Thai Pork Loin.

Looking at the size of the chunks in the sample photo, I see how I could have cut my ingredients differently, however, I still stand by the choices I made. The method of preparation I chose is what Jamie and I would prefer versus what the book tells you to do.

3-9: Mexican Chicken Soup

Chicken soup is always good on a day when you are feeling sick. I made 3-9: Mexican Chicken Soup on a really hot day, basically the worst type of day to make chicken soup. I was able to freeze and store all of this soup for future meals. Later on in the week that I made this soup, I caught a nasty cold and having a stockpile of chicken soup really helped me feel better.

The spice mixture is the only part of this soup that is remotely Mexican.

5-5: Individual Ham Quiches

I wasn’t about to go out and buy mini quiche pans just to cook 5-5: Individual Ham Quiches. Taking the alternative route, I made this dish as one, full-sized quiche.

5-5-individual-ham-quiches_page_1I believe the card puts it best. At this point I’m not quite “fortunate enough to own small oven-proof quiche pans,” so a full-sized pie pan will do. If you use a foil pie pan, there is a lot less cleanup when the quiche is done, just toss the foil pan in the recycling. ♻

Jamie made me a dish when we first started dating that she called “Shrimp Something“. This recipe, 11-3: Indian Scampi is a dish that is pretty similar to “Shrimp Something” so I really enjoyed it. 👍

13-14: Wok-Fried Veggies with Pasta

13-14: Wok-Fried Veggies with Pasta is yet another dish where the preparation requires too much chopping. One of my specialties happens to be stir fry. I can make stir fry with the best of them.

This one, 5-33: Omelette Stacks with Rice, was a Saturday morning breakfast a few weeks ago that was born out of an abundance of eggs and leftover cooked rice. 🍚

7-8: Chinese Pork Casserole

Whosoever it was that the editors of Simply Delicious hired to name these dishes deserves some kind of award.  And the award for naming-the-most-dishes-a-casserole-that-are-not-actually-a-casserole goes to….SIMPLY DELICIOUS. A casserole is defined as “a kind of stew or side dish that is cooked slowly in an oven.” 7-8: Chinese Pork Casserole is cooked relatively fast on a stove top. Doesn’t exactly sound like a casserole to me.

Jamie made this recipe, 3-21: Broccoli-Celery Soup, for me before on a mild Christmas Eve. 🎅🏽 We were living in Glendale at the time, it doesn’t exactly get cold there. ❄

(Editor’s noteI didn’t make this on Christmas Eve–my mom did. I don’t know which Christmas Eve, but that’s definitely her writing. I did however, make this when we lived in Glendale, CAand he’s right about that–it doesn’t get that cold there.)

12-14: Brown Rice Casserole

12-14: Brown Rice Casserole doesn’t sound very appetizing, but it is very cheap to make and very filling. I made this dish before I took a trip as a meal prep and it really helped me keep my eating in check. ✅

12-23: Tortellini with Broccoli

12-23: Tortellini with Broccoli is yet another Simply Delicious recipe where their idea of a cream sauce is pouring sour cream on top of something warm and stirring it in. When using lactose free sour cream, the sauce comes out too thick. It’s still chunky on top of the pasta. Maybe I need to cook it longer or stir it more, I will keep experimenting to find out. Onto…the recipe!

12-23 Tortellini with Broccoli_Page_1It had been a while since I ate tortellini and this recipe gives you an idea of how to make a sauce in a pinch. Simply Delicious has other recipes such as 6-2: Fiery Chicken Casserole where the method to make a quick cream sauce is to dump sour cream into the pot.
