8-38: Brandy Two-Pepper Beef Steak

I got into making my own plant-based meats a few years ago, mostly because the options available in the markets at the time were A) expensive; B) hard to find; and C) not very good. B and C have mostly been rectified in the last few years, so I find myself buying more of that and making less of my own (proving that time is money).

However, I had at one point stocked up my freezer with a lot of the homemade stuff, so 8-38: Brandy Two-Pepper Beef Steak is another one of those recipes where I was using up what was left of that stash.

It’s been challenging to figure out how to tackle these meat-focused recipes when I don’t really eat it anymore, so a lot of these have ended up being more “adaptations” rather than full replications of the given recipe. There’s so many cooking travesties on social media and the internet these days–this feels like a drop in the bucket at this point.

Salads are usually a good choice when it’s hot out, and since we’re currently in the middle of summer (here in the U.S.), 2-3: Salad Niçoise (pronounced nee-swah) might be a good choice for an upcoming meal. Plus, it primarily uses readily-available canned/jarred ingredients, which can be helpful for both budgets and pandemic shopping.

Salade niçoise is a well-known dish (like the last recipe I covered, 14-8: Baked Alaska), and there are many different versions of it out there. Even Simply Delicious alludes to the different variations in their blurb above– although what they insist as a “must” (eggs, tuna, olives) seems to be up to interpretation.

9-1: Spicy Beef Patties

Any excuse to pull out the electric griddle is alright with me! After all of the meatball-style recipes in the Ground Meat and Sausage section, I was ready for a patty-style recipe again and 9-1: Spicy Beef Patties did not disappoint. I’ve never thought to put pickled beets into a burger before, but after trying this recipe, I would consider it again.

I love the little skinned potatoes they served alongside the patties in the example photo. I haven’t quite learned the technique to cook those yet. Their side salad is very photogenic, but not very filling. 3 tomato slices and 1 leaf of lettuce.

2-20: Potato and Sausage Salad

Simply Delicious has a few variations on potato salad–2-17: Spicy Potato Salad is closer to a German variation, using a vinegar dressing instead of mayonnaise. This recipe, 2-20: Potato and Sausage Salad not only uses mayonnaise, but includes your choice of cured meat to accompany it–I went with chicken sausage, but you can use hot dogs, spicy links, or anything similar.

I caught a typo here–they mention capers in this blurb above, but dropped it from the actual ingredients list after the jump. I never realized it and now wish I had–capers would have been a welcome addition to this potato salad, especially instead of beets.

Deviled eggs (to me) usually have mustard and mayo mixed with the yolks, and some paprika sprinkled on top. These eggs have NONE of those things (except the egg parts).

If you still have any zucchini or tomatoes lying around from a late summer harvest, this is a great vegetarian recipe with which to use those up. ?

Also note the new background: my first entry from my new (hopefully somewhat permanent) kitchen. 🙂

I styled mine in more of a fried zucchini-appetizer way, but the casserole way works too.
