6-6: Ginger Chicken

It’s not unusual to find a “ginger chicken” recipe on a Chinese takeout menu, but in case you’re looking to cut down on those high restaurant and delivery costs, here’s Simply Delicious‘ take on it: 6-6: Ginger Chicken. I don’t really buy meat anymore these days (unless you count the occasional boiled chicken/plain white rice I make when the dog gets an upset tummy), but from what I can tell, even those prices are pretty much through the roof. Maybe consider Ginger Tofu instead?

I don’t even have peanut allergies and yet I look at that picture and start to get itchy. I love it though–who at Simply Delicious decided that they REALLY needed to drive home the fact that this recipe HAS LOTS OF PEANUTS? And yet, the actual recipe only calls for about half a cup.

What are we supposed to do with the rest of them? Guess it’s a good thing baseball solved that whole lockout thing.

6-12: Chicken à la King

Here’s another “traditional” recipe from Simply Delicious: 6-12: Chicken à la King. I’ve heard of this one before (you probably have too), but never ate it much as a kid despite it being chicken-based (the mushrooms were probably the dealbreaker for my mom). This is from the “new book“, so I didn’t even know Simply Delicious HAD a Chicken à la King recipe until recently.

Chicken à la King has been around for a while, but enjoyed a resurgence in mid-to-late 20th century America (probably due to all the Baby Boomers and a need to feed them cheaply/quickly). It seems “dated” to me at this point (and not necessarily in a good way), but probably was still pretty popular in some parts of the country at the time these books were published.

Combine this with 8-12: Beef Stroganoff, and you’ve got a pretty good handle on mediocre American cuisine from the 1980s.

6-16: The Chef’s Special Chicken

I’ll be honest–I have no idea why this is “special chicken”. But for me, 6-16: The Chef’s Special Chicken will be special because I made it with “chick’n” instead of the real thing. I guess that’s not all that special for me at this point, but maybe for you?

If you search for “chef’s special chicken”, you’ll get a million different types of recipes, so I’m not sure what makes this one especially traditional. Although this one I found is pretty much this same exact recipe, so I guess it’s not as unknown as I thought. That or someone ripped off Simply Delicious and called it their own.

In a restaurant when you see “chef’s special”, it usually translates to “this is about to go bad so let’s try to sell it tonight however we can”. #themoreyouknow

6-42: Turkey Pot Roast

Looking for a smaller Thanksgiving option this year than the traditional 6-29: Stuffed Turkey? Here’s part of what I made for last year’s meal–6-42: Turkey Pot Roast. If you’re cooking for less people this year (or any year) and still want something Thanksgiving-ish, this might be a good option.

I didn’t want to make a full turkey for only two meat eaters (me not being one of those two), so I combined this recipe along with some additional leg and thigh pieces into enough turkey to complete the holiday without having to make more than we needed.

This is also MUCH easier to do than a full turkey, especially if you’ve never attempted one of those before and don’t want 2020 to be your first run at it. 6-9: Orange-Glazed Turkey Breast is another “smaller” turkey option if you’re just looking for a taste of turkey instead of a glut of it.

2-31: Smoked Chicken Salad

Given the header picture, I suppose it’s not much of a secret that I’ve made some adaptations to 2-31: Smoked Chicken Salad. Namely, that I’ve changed it from a salad to a sandwich. Here’s the thing–it’s a sad salad as written, but can be made into a pretty decent sandwich that doesn’t require anything different than what’s already required/recommended.

See those rolls in the back of the picture (the ones suggested in the blurb above)? Here’s the quick and dirty: cut one open, take the (very few) salad ingredients, stack inside, eat. 1-3: Melon with Smoked Turkey

Believe it or not, 1-3: Melon with Smoked Turkey is one of my last few remaining Group 01: Hot and Cold Appetizers recipes left to cover. I’ve put this one off for a while because I’m not a big fan of melon (other than watermelons)–but when the weekly CSA box keeps bringing them to you, you have to do something with them.

Theirs looks super fancy–mine looks like a sloppy mess. I suppose if I were actually serving this for a party I would have tried harder. Melon + meat = appetizer isn’t a new equation–even Pillsbury has their own version. Most versions include prosciutto instead of turkey, which is the variant I’m more familiar with.

12-24: Cannelloni with Chicken

Meal-prepping is trendy now, but it’s always been a good idea if you want to save money and calories. 12-24: Cannelloni with Chicken works well if you want to make it on a Sunday, split it up into a few containers, and reheat it throughout the week. At least, that’s how we ate it.

Even Simply Delicious advises you can make this meal ahead of time, although their suggestion is for entertaining guests. This recipe/concept is pretty versatile–it’s good fresh or as leftovers.

6-58: Chicken Pie with Puff Pastry

6-58: Chicken Pie with Puff Pastry

Yo. As I’ve said previously, I take breaks from this project when life gets in the way. This summer was BANANAS, and fall seems to be quickly passing me by as well. I haven’t given up on cooking and photographing recipes, but I seem to have dropped the ball on actually writing them up and posting them.

I made the first attempt to rectify this earlier today when I uploaded about 600 pictures from two memory cards that I’ve filled up since May of this year. I made the second when I set up all the folders to start organizing the pictures (we’re talking over 50 recipes here).

Here’s the third: a recipe I cooked back sometime in early 2019, 6-58: Chicken Pie with Puff Pastry. This has been in various draft stages since April, and I’m finally finishing it NOW. This isn’t even part of the memory card dump from today–that’s how far behind I am.

This is essentially chicken pot pie. I mean, how is it not? The major difference between this and Marie Callender’s is that this one only has pastry on top.

1-2: Marinated Stuffed Avocado

Avocados have been a pretty big part of my culinary life up until now, but that’s probably because they’re pretty hard to avoid here in California. However, my experiences are usually closer to some nice fresh guacamole or some avocado toast–1-2: Marinated Stuffed Avocado was relatively new territory for me.

I suppose it’s not unheard of, it’s just not something I think to do. I may try it again, maybe with some different ingredients. Mushrooms are okay, but I much prefer them cooked rather than raw.

2-23: Grilled Chicken Salad

Who doesn’t love a simple salad? The editors of Simply Delicious knocked one out of the park with 2-23: Grilled Chicken Salad. Combining fresh vegetables with nicely cooked chicken is an easy method for creating a killer salad. My final product didn’t look much like the photo below, but the flavor is totally on point.

I love the bowl of strawberries and fresh baked biscuits behind the salad in the product photo.
